That seems like proof to me. Valve will probably have a record of exactly when you got each of them, and a list of the times you joined each server. Depending on how concerned they are about it, you may find that they will chase up the exploit server but be unable to reset your achievements.
I dislike the VAC thing -- it blocks a lot of the most outrageous hacks but there's still a lot that gets passed it. It gives a false sense of security. Additionally, I'm pretty sure it doesn't prevent server hacks, like the one you describe.
P.S. What do you mean by green bots?

As a server owner, you can force custom models on players, but it takes a couple extra Sourcemod plugins and you have to have the players download the content.
Also, there are ways of fooling VAC into allowing you to do things like instant-achievements, but they're generally not used outside of farming servers.

You don't even have to send the client any files for a simple colour-changer servermod.
